Cowboy Butter Melting Potatoes

What You'll Need (Part 1)

- 2 lbs Yukon Gold potatoes, peeled & cut into 1" rounds - 1/2 cup unsalted butter, softened - 4 cloves garlic, minced - 2 tbsp fresh parsley, chopped - 1 tbsp fresh thyme, chopped

What You'll Need (Part 2)

- 1 tsp paprika - 1/2 tsp cayenne pepper - 1 tsp salt - 1/2 tsp black pepper - 1 cup chicken or vegetable broth - 4 cloves garlic, smashed

Step 1: Make Cowboy Butter

In a bowl, mix softened butter with minced garlic, parsley, thyme, paprika, cayenne, salt, and pepper.

Step 2: Prepare Potatoes

Peel and cut potatoes into 1" rounds. Melt 1/4 cup cowboy butter and toss with potatoes to coat.

Step 3: Arrange on Baking Sheet

Place coated potatoes in a single layer on a rimmed baking sheet.

Step 4: Roast Potatoes

Preheat oven to 450°F. Roast for 15 mins, flip, then roast another 15 mins until golden brown.

Step 5: Add Broth

Carefully pour 1 cup broth over potatoes and add smashed garlic. Roast 15 mins more until tender.

Step 6: Serve

Drizzle with remaining melted cowboy butter. Garnish with chopped parsley.
