Tiramisu is an Italian classic with coffee-soaked ladyfingers and mascarpone cream. This strawberry version is a fresh, summery twist!
1 lb fresh strawberries, hulled and sliced 1 cup heavy cream 8 oz mascarpone cheese 1/2 cup granulated sugar 1 tsp vanilla extract 1 package (7 oz) ladyfingers 1/2 cup orange juice 2 tbsp powdered sugar (for garnish)
Mix sliced strawberries with 2 tbsp sugar. Let sit for 15 minutes to release their juices.
Whip heavy cream to soft peaks. Beat mascarpone, remaining sugar, and vanilla, then fold in the whipped cream.
Combine orange juice with 2 tbsp strawberry juice from the macerated strawberries.
Quickly dip ladyfingers in the liquid and arrange in a single layer in an 8x8 inch dish.
Spread half the cream over the ladyfingers, add strawberries, then repeat with more ladyfingers and cream.
Refrigerate for at least 4 hours. Garnish with strawberries and powdered sugar before serving.
